Chicken curry (using beef)

This is based on my mum's Chicken Curry passed down the Mackenzie clan

  • Chicken 500-600g - something like Breast Fillet or Tenderloins whatever (who cares) cut into chunky pieces. I did not have any chicken, never mind Beef Stir Fry Strips will do.
  • Potatoes - how many your choice, cut into smaller pieces.

  • Onions - Larger one diced, medium one sliced.
  1. Brown the meat & chuck in diced onion. Cook a bit then toss in sliced onion.
  2. Add the Keens meal base and mix in well. Add potatoes and cover, burner on low.
  3. Keep checking and turn over, if needed add coconut milk or just water.
  4. Cook for a while test poke potatoes I use a small fork turn off when ready.

Also cooked basmati rice

The Kmart 7 cup rice cooker for $14 works well - that's a good result.

Enough for now, have a rest and then wash-up.
