This is based on my mum's Chicken Curry passed down the Mackenzie clan
- Chicken 500-600g - something like Breast Fillet or Tenderloins whatever (who cares) cut into chunky pieces. I did not have any chicken, never mind Beef Stir Fry Strips will do.
- Potatoes - how many your choice, cut into smaller pieces.
- Onions - Larger one diced, medium one sliced.
- Brown the meat & chuck in diced onion. Cook a bit then toss in sliced onion.
- Add the Keens meal base and mix in well. Add potatoes and cover, burner on low.
- Keep checking and turn over, if needed add coconut milk or just water.
- Cook for a while test poke potatoes I use a small fork turn off when ready.
Also cooked basmati rice
The Kmart 7 cup rice cooker for $14 works well - that's a good result.
Enough for now, have a rest and then wash-up.
